1/4 Cup olive oil/or vegan butter

1 onion chopped

1 zucchini cut in half and sliced

I squash cut in half and sliced

3 garlic cloves minced

2 tablespoons lemon juice

1 teaspoon salt

1 teaspoon pepper


Prepare pasta according to package directions: drain

In sauce pan, while pasta is cooking add oil/ or vegan butter, onions, zucchini, squash and garlic; saute until tender

Add lemon juice, salt and pepper; heat through.

Optional 2 Tablespoons fresh chives, snipped

Toss cooked linguine with mixture and serve.

Optional – add 2 tablespoons of fresh chives
