25 Minute Egg Roll In A Bowl


A great weeknight meal that’s done- from prep to on the table in 25 minutes. Healthy, low in carbs!

I bag coleslaw rinsed and drained

2 tbsp sesame oil 2 times around the pan

1 medium onion, diced

4 cloves garlic, chopped

2 tbsp fresh ginger, grated

3 tbsp rice wine vinegar

1 tbsp sriracha

sea salt, to taste

black pepper, to taste

3 green onions, chopped


Prep: Chop your onion, green onion, garlic. Grate your ginger (or diced super small if you don’t have a grater)

Turn a large skillet on with sesame oil to medium-high heat. Or, turn your Instant Pot on saute`.

Add onion and garlic, let cook until fragrant and onions are translucent, approximately 2 minutes.

Add ginger, salt, pepper. Let cook completely through.

Add bag of coleslaw, 2 tbsp of Sriracha, rice wine vinegar and soy sauce. Stir to combine in skillet or Instant Pot. Let cook until coleslaw is tender.

Serve hot into bowls. Garnish with Sriracha for your heat level and green onions.
