Italian Soup
½ Onion
2 stalks celery
2 carrots
½ red pepper
½ green pepper
1 carton baby portabello mushrooms
1 tsp. sea salt
1 tsp pepper
I tsp garlic powder
1 tsp onion powder
1 TBS Italian seasoning
Saute above ingredients until mushrooms start to soften, then add
2 cans cannellini beans drained
2 small or 1 large can diced tomatoes
1 carton vegetable stock
2 TBS garlic powder
2 TBS onion powder
1 TBS sea salt
½ to 1 TBS pepper
1/8 c. Italian seasoning.
Bring to a boil for 1 hour or until carrots are soft.
You can add more seasoning to taste.
